Meet your driver at your accommodation in Hua Hin, Cha-Am, Pran Buri or Phetchaburi and drive to the Wildlife Friends Foundation in Phetchaburi. When you arrive, meet and greet your guide for the day. Follow an informed guided tour around all areas of the center as you see some of the rescued animals, hear their stories, and learn why they are living at the center. At noon, enjoy lunch and refreshments including a Thai buffet looking over the large multi-species enclosure with elephants, gibbons, and other animals. The various meal options consist of vegan, vegetarian, and meat. After lunch, meet and feed one of the elephants. See how the volunteers at the elephant refuge go about their daily tasks. Learn about the elephant’s individual stories and personalities. Find out about the conservation issues that elephants face, and how they are exploited by tourist attractions, forced to carry lots of people and perform tricks – you will see none of this at the elephant refuge, where the elephant's natural behavior is of paramount importance. The tour commences tasting the vibrant food of the NorthEast – Isaan. This region is known for its grilled meats and magnificent spicy salads. Here we try some classic Northern dishes like Khao Soi: Chiang Mai Noodles, a dish reminiscent of laksa. A local restaurant specialising in the food of Southern Thailand is next. It is here we experience the unique use of different spices to develop the flavours of this region. The food of the Central Region is where we end our tour, highlighting Royal Thai Cuisine in fact; this unique cuisine is not seen in its true form too regularly these days. The food and the setting are magnificent. Here we try Khao Chae: Rice In Cool Fragrant Water; a Royal Thai snack unique to the region; this dish will challenge the taste buds. We also try Gaeng Kieow Wan: Green Curry. Many will have tried green curry before, but as with all Royal Thai dishes, this one is refined and elegantly presented, with a brilliant depth of flavour. You are transported in air-conditioned comfort to experience each of these venues. This tour is about imparting some understanding of the culinary differences of the four very diverse food regions in this magnificent country.

The term ‘Jing Jing’ means real or authentic. For us, it’s about doing Thai food justice. This tour is deliberately designed with the more experienced Thai traveller in mind. It is for the traveller looking to find new and exciting Thai dishes that they have not yet tried. We try some spicy dishes along with more mild ones; all exhibiting that wonderful Thai ‘balance’. You may find it hard to believe, but the humble chilli is not native to Thailand. It found its way here with Portuguese navigators in the 16th century via developed trade routes. It’s very difficult to imagine Thai food without chilli, so symbiotic is the relationship, yet contrary to popular belief, not all Thais love their food searingly hot. Many prefer to opt for a more medium spice level. As long as the dish and meal are in balance, it all works. This is how we will be sampling Thai food. We start the afternoon in the back streets of Hua Hin. Here we try some southern food, which is often redolent of Indian spices like turmeric. Dishes will include Bplaa Dook Fuu Phat Phrik Gaeng: Stir Fried Crispy Shredded Catfish, as well as either Sa-dtor Phat Phrik Gaeng: Stir Fried Stink Beans w/- Prawns or Khua Gling: Dry-Fried Yellow Pork Mince Curry; it is simply delicious. NorthEastern food; the food of Isaan, is our next port of call. You can’t really use the term Jing Jing without sampling Isaan food – the flavour explosion region of Thailand. Our tour guides will choose dishes that our guests have not tried before, whether that is Soop Nor Mai: Hot ‘n’ Sour Warm Bamboo Shoot Salad, or an unfamiliar version of a dish which is fast becoming Thailand’s national dish, Som Dtam: Green Papaya Salad; though we will pick one of the myriad variations to the standard papaya, just to challenge your taste buds. Over the tour, our guides will assess your level of Thai food knowledge and stop at other vendors to take your food experience to the next level. This tour is about getting ‘under the skin’ of the food scene in Hua Hin and exploring where locals go to eat at night. It’s about seeing the freshest local produce in a local food market full of tasty delights. In the market, we will be eating standing up. This way we can move around and sample what the vendors have to offer. We then leave the market and visit two local eateries, finishing up at a street food vendor to sample Thai sweets. Come hungry!! We first start by exploring the fresh ingredients that make up the flavours of Thai food. You will see local chefs and restaurant owners here buying their ingredients for the next day, indicating that the produce is of the highest quality. We then make our way to the front of the market, where there are a myriad of vendors cooking and selling their food. Our passionate ‘foodie’ tour guides will guide you through the market; sampling as we go. In this true local market, we will taste whatever we find that looks good on the day, as not all vendors are there every day. Taste Northeastern pork sausages, Sai Krok Isaan, the way the locals eat them, try northern food at a very popular food stall as well as sampling some unfamiliar but tasty fruits. We then travel to a local eatery where we will sample some great dishes from the central and northern regions. This out of the way garden restaurant serves up some interesting dishes that you may not have had before, but may become your new favourite! Dishes like Yam Naem Khao Thot Fermented Pork Salad w/- Crispy Rice Balls or Khao Soi Gai Chiang Mai Noodles (similar to Laksa). Our next stop is a very local restaurant specialising in Miang Bplaa Phao: Salt Crusted Grilled Fish; we wrap this in lettuce leaves along with lots of herbs. This venue also serves many other Isaan dishes, so we will look to try a vibrant salad or something else from the wonderful world of Isaan food. Our last stop is to a popular sweets vendor. True to the palace’s translated name, Far From Worries, you have no worries to come to try two of the North’s most famous dishes in Khao Soi: Chiang Mai Noodles and Sai Ua: Chiang Mai Sausage. It’s not so easy to find great Northern food outside of the North of Thailand, but here, this woman has been serving up great Northern food for over 20 years. You’ll taste why she has been going so long. We will also squeeze in a stop at a popular area for daytime street food before finishing at a garden restaurant to taste some classic dishes from the central region of Thailand.
