Sinapius has been loved and nurtured by Tasmanian couple Linda and Vaughn, who chose to follow a simple, hands-on winemaking and vineyard philosophy. After the sudden passing of Vaughn in 2020, Linda, their daughters and the close knit Sinapius family have continued to produce some of Tasmania’s most recognised wines as his legacy. In their gorgeous, leafy cellar door, the team invites you to enjoy an intimate tasting of their expressive portfolio. The salty sea air draws us to the coast for our final stop of the day. Here in the tiny, windswept town of Tam O’Shanter, we will introduce you to Tasmanian whisky at its finest. Welcome to the simple splendour of Fanny’s Bay Distillery. Hear firsthand the story of how Mathew and Julie Cooper went from retired couple to award winning whisky producers. Their ‘liquid gold’ is now exported to high end restaurants and exclusive resorts across the world. Experience it for yourself, during a laid-back tasting (with complementary Tasmanian dark chocolate) in this humble seaside distillery. The perfect way to conclude our tasting trail, before we return, full of good spirits, to Launceston.

Our first stop today is “The Ridge”. Situated in the foothills of majestic Mt. Arthur, this is Tasmania’s highest vineyard, where owners Harry and Susie boast of turning mountain air into wine – and what’s not to love about that! When they’re not busy turning mountain air into wine, Harry (A rockstar with a Harvard law degree) can be found jamming with his band, whist Susie can be found with a brush in hand, painting landscapes of her idyllic surrounds or scenes from adventures further afield. Under the old oak tree of this ‘by appointment’ cellar door, let us introduce you to Tasmanian wine royalty. Seriously. This winemaker’s wine has been sipped by Queen Elizabeth II herself, and on more than one occasion! We are, of course, at Apogee. Tasmanian wine pioneer Dr. Andrew Pirie used his doctoral thesis knowledge (based around the perfect Tassie terrior) to plant two hectares at Lebrina. Andrew is, without a doubt, one of Australia’s most respected winemakers. We are honoured to invite you to taste Andrew’s passion for perfection in a disgorging demonstration followed by a private tasting, vineyard platter and lunch inspired by the season. Our third and final vineyard for the day is Delamere. Established in 1982, this is one of the oldest vineyards in the region. After collectively practising their winemaking craft in acclaimed wine regions across the world, vigneron duo Fran and Shane discovered the sparkling potential of the region in 2007 and have nurtured Delamere ever since. Consistently producing a range of both quality table wines and traditional method sparkling, Fran and Shane aim to “encapsulate the story of each season” in their beautiful wines. My girlfriend and I loved this tour great wines, David was our best friend super helpful and made this a great little tour. Lunch was delicious and all the scenery was spectacular. Was also great going to the local winery's and thoroughly enjoyed there tastings. My girlfriend really enjoys wine and I'm somewhat new to it but still had a great trip and bought heaps of wine and a Gin.

The whole day was superb, every winery we went to was great, Terry our driver was very knowledgeable about wines and a great driver. The group we were with were lovely people. Highly recommend this tour!!

Wonderful driver, Terry made the day with his happy and accommodating disposition. The wineries were fabulous, but hands down Hinton Bay for being the most awesome wine tasting experience.

Highly recommend! Our driver Iain was fabulous and we enjoyed the whole day.
